What's
your pleasure?
- Truffles
created in the elegant French style, flavored with true American playfulness.
- Traditional
caramel turtles (nonvegan) scented with Chinese hibiscus.
- Bittersweet
and white chocolate barks glowing with sumptuous fruit and nut pairings.
- Dense,
intense chocolate cakes, either vegan or nonvegan. No frosting
to obscure their superb chocolate souls (Valrhona
and Scharffen Berger,
respectively).
What
is it about these chocolates?
- All
dark chocolate used in these wonderful creations is bittersweet Scharffen
Berger or Valrhona — no milk chocolate here. Ganache centers
for each dark chocolate truffle are made from Scharffen Berger's 62% or
70% bittersweet chocolate, then rolled in Valrhona's cocoa powder.
- All
white chocolates are Callebaut,
from their ganache centers to their shells.
- Each
chocolate is handmade in small batches to ensure its freshness.
- Each
truffle's ganache center is vegan. Sacre bleu, how is it possible,
you ask? Simple, mes amis. I use unsweetened coconut milk instead of heavy
cream. Outrageously rich, these are still your French grandmother's truffles
(if she chose to not use dairy).
